The trouble with the hostel life is that we keep lamenting about the restrictions and rules when we are a part of it,but the moment we step out,it dawns on us what we have left in the dust of times.
Whenever I turn back the pages of time there are always a few anecdotes which pop up that too in fluoroscent colors,and this one is just a pearl from the strand.
The midnight birthday celebrations in hostel are nothing new to us.They used to be a huge rage amidst our otherwise monotonous routine,and the one Im mentioning was a special one as it was my senior-cum-movie partner-cum-namesake Ritika mam's birthday.I remember I had planned everything to the T,including Cake,music,cold drinks,hostel party permission.I had also planned for paneer chilly as starters which was considered as prodigal...
I had meticulously chopped the veggies(not to forget the juniors I exploited on the name of helping!!),made the batter,and took out paneer out of the fridge when the shrillest of voice pierced my ears.
."Ratttsssssssssss!!!!!!!" my nickname in college.
I recognized the voice coming from the room immediately below mine and was occupied by none other than Ritika mam.I rushed to her room skipping two stairs at a time,only to find Riti Mam standing on her bed with a broom in her hand,shivering and sweating at the same time.
I looked around the room to find the source of her pathos and stifled a laughter when I found Geeta and Saroj in one corner,head hung like convicts.I asked them to leave politely and they did.
"What is it with them and you?"
"I hate them." came the curt but fear-drenched reply.
"Anyways You want to read my latest poem.",asked mam.
"Sure." I thumped on her bed,ruffled through her journal completely oblivious to my paneer chilly and my room.
Two minutes jumped to two hours and it was already 10 PM,two hours to her birthday,and two minutes for the hostel gates to be closed.
I made some lame excuse about my ill roommate and ran.
There I found Geeta and Saroj blissfully chomping off my paneer and without any guilt or remorse.
Did I forget to mention that Geeta and Saroj were the recent occupants of girls' hostel,their mother Chandni the fattest and the laziest cat I had ever seen,being the old resident.They were named after our HOD's of OBG and PAEDS dept. respectively out of contempt for our not-so-helpful professors.But it was totally another thing when it came to those two,cute,cuddly,furry bundles of joy.I couldnt help myself but laugh at their grey-white whiskers smeared in paneer.
But I had to come up with a solution as well,so I racked my brains and came out with this dish which was a huge success at her party and I was asked a 100 times bout the recipe.
Heres the recipe of my famous Tangy chilli chips.

YOU WILL NEED-
- 10-12 medium sized potaoes.
- 5-6 ripe tomatoes(cherry tomatoes work fine)
- 10-12 shallots
- Ginger-garlic paste 2 teaspoons.
- 2-3 green chillies
- 1 Green,red and yellow capsicum each.
- 1/4th can Del-monte Corns
- 1/4th cup cornflour
- 1/4th cup plain flour(maida)
- 3 table spoon Del monte olive oil
- Del monte pasta sauce
- White vinegar(as per taste)
- Del monte Tomato ketchup.
- Del monte chilli sauce
- Soya sauce
- Salt to taste
METHOD-
- Cut the potatoes in long thick strips(Think french fries!!) keep them soaked in water(it cuts down the carb intake)
- Mix cornflour,maida,salt and 1/4 cup of water to make it a smooth batter thick enough to coat.
- Chop the shallots in half,chop the capsicum,tomatoes,chillies.Keep aside.
- Now coat the potato strips in batter and deep fry them in Del monte olive oil(trust me,it adds an Italian touch to the obvious Asian dish).Keep aside on a paper napkin to soak the excess oil.
- Heat olive oil in a shallow pan .add shallots when hot,fry them till they turn translucent,add capsicum,chillies,ginger garlic paste,and keep frying them till soft.(You can par boil the capsicum before hand for better taste).Add corns (again par-boiled corns will taste better)
- Add tomatoes,Del monte pasta sauce,tomato and chilli sauce,white vinegar and soya sauce(as per your taste buds)
- At the end add already fried potatoes.
- Keep them on flame for 5-7 mins.
Voila!!!! your TANGY CHILLI CHIPS are ready to be devoured.!!!!!!!
